Recipe Of The Week: Quinoa And Baked Salmon
This week my sister and I made this delicious twenty minute meal. Salmon not only is a great source of protein, it is rich in essential fatty acids and keeps you full for longer. It’s the perfect recipe for Summer days (I just can’t help but have that summer feelin’ even if the temperatures are not quite high enough). I love it that this recipe is just so quick and really easy to make. At the end of the day it’s all about keeping it simple and super tasty 😉
Ingredients
1 Salmon fillet
1 Cup of cooked quinoa
1/2 Â Small cup of frozen peas
1/2 Â Small cup of edamame beans
1 Garlic clove finely chopped
1/2 Â Shallot finely chopped
5 Cherry tomatoes chopped in quarters
A handful of parsley finely chopped
Olive oil
Himalayan salt and pepper
Start by heating your oven to 180c. Place the salmon in an oven tray and season with salt and pepper and olive oil and place in the oven. While the fish is cooking cook the quinoa according to the instructions on the packet. While the quinoa and salmon are cooking heat up a pan on medium heat with the olive oil, garlic and shallot and 1/4 cup of water. Sautee’ for 2 mins then add the peas and edamame beans and sauté’ until the beans are cooked and the tomatoes are soft. Add the parsley at the end. Once the quinoa is cooked place on the plate with the beans on top. Take out the salmon and place it on top of the beans. Enjoy!
