Recipe Of The Week: Blueberry Oat Bars
This week my sister and I made these delicious oat bars. Oats are so versatile, that is why we love them. These bars are delicious and perfect if you are constantly on the go and you want a very quick breakfast. You can make a batch of these and freeze them. They are also ideal for snacking during the day when you have that afternoon slump and need a little ‘pick me up’.
Ingredients
200g of Rolled oats
4 Tablespoons of coconut oil
3 Tablespoons of cashew butter
3 Tablespoons of raw honey
1 Cup of blueberries
Line a baking tray with greaseproof paper or grease the tray with coconut oil and pre heat the oven to 170C. Melt the coconut oil, cashew butter, honey on medium heat, Once all the ingredients have melted add the oats and stir making sure the oats are covered with the mixture. Add the blueberries and pour the mixture into the baking tray and place in the oven for about 20-25 minutes or until it is lovely and golden. Ovens vary so check to make sure it does not burn. Once ready put the baking tray to the side and allow it to cool. It is important to allow it to cool down before you cut in into bars otherwise it will fall apart. You can freeze them or keep them in the fridge.
