Quinoa Salad With Asparagus & Edamame
Lets be honest most days we don’t have time spending hours in the kitchen making lunch. It can all be too easy to buy a ready made meal or sandwich. However making something nutritious can be ever so simple and super quick. Now with summer on the way, healthy salads are the perfect pick me up. The other day I made this quinoa salad in 15 mins – It really doesn’t take that much time out of your day to make this and we just need to make that little effort to stop what we are doing and enjoy a lunch break- even if extremely short! This is perfect to prepare the night before, so no excuses 😉
Ingredients
1/2 cup of quinoa (for one serving)
2 cups of water
Bunch of Asparagus
A handful of Edamame beans
Feta Cheese
2 Walnuts
Extra Virgin Oil, lemon, salt & pepper – for dressing
Place the quinoa with water in a saucepan and let it simmer for 10 minutes. Make sure to add a little salt to the boiling water. After, stir with a fork so the quinoa is all fluffy and let it rest for 5 minutes. In the meantime chop the asparagus and steam with the edamame beans for five minutes (otherwise you can boil). I tend not to cook them too much as they are then full of goodness. Once ready mix into the quinoa. Then add crumbled feta cheese and sprinkle over chopped walnuts. Drizzle olive oil, add a squeeze of lemon juice and salt & pepper. Voila your salad is now ready – how easy was that?!
