Recipe of the Week: Superfood Brownies
Happy Monday peeps! New week new recipe up on the blog. My sister came with these awesome superfood brownies, which are a really good alternative for healthy snacking. They have a really nice nutty flavour and are just packed full of goodness.

Ingredients
1/2 cup of almonds
1/2 cup of cashew nuts
1 cup of pumpkin, sunflower and sesame seeds
1/2 cup of chia seeds
2 1/2 cups of dates
1 heaped tablespoon of Neil’s Yard Superfood Organic Greens Complex
1 tablespoon of hemp protein powder
1 teaspoon of raw cacao powder
1 tablespoon of coconut oil
1 tablespoon of vanilla extract
Goji berries to sprinkle on top
Start by placing the almonds and cashew nuts into the food processor and blend. Then add the dates little at a time and blend until a sticky dough forms. Then add the rest of the ingredients except for the goji berries and blend. Once all combined place the mixture into a baking tray that has been greased with coconut oil, or lined with baking paper. Spread the mixture with your hands. Sprinkle the goji berries on top and place in the fridge for an hour, then slice into squares and enjoy!
