Recipe Of The Week: Gingerbread Biscuits

‘These gingerbread Christmas biscuits are perfect for the festive season. The reason I like them is because they are not too sweet and are great with a cup of tea’.
Ingredients
350g Doves gluten free flour
1 teaspoon doves gluten free xanthan gum
1 teaspoon doves gluten free baking powder
2 teaspoons ground ginger
1 teaspoon ground cinnamon
1 teaspoon ground nutmeg
4 tablespoons coconut oil melted
175g xylitol
1 organic egg
4 tablespoons maple syrup
1 teaspoon vanilla extract
Put the flour, xantham gum, baking powder, the coconut oil and the spices in the food processor and blend till you get a breadcrumb mixture. Add the sugar and process then add the egg, maple syrup and vanilla extract and process till the dough sticks together. Remove from the food processor onto a floured work surface and work the dough into a ball. Cover in cling film and place in the fridge for 30 minutes. Once ready remove the dough from the cling film and start rolling it out thinly. Use a cutter to cut out the biscuits. I used different christmas shape cutters. You can use ginger bread men or any cutter of your choice. Place onto a tray lined with parchment paper in a preheated oven of 180C and cook for 12-15 minutes. Each oven is different so cooking times will vary. The biscuits will be ready when they will be golden. Once cooked allow to cool before enjoying.
