Spelt Focaccia Yeast Free Bread
For those of you that know me well, know that I love experimenting in the kitchen. I’m always trying to find yummy healthy alternatives to the things I love. I’m a big lover of focaccia bread so I decided to try a spelt version. This crispy crust and soft bread is a delicatessen here in tuscany and so I wanted to make an alternative wheat and yeast free – and I have to say it tastes just as delicious and so easy to make 🙂
Ingredients
500g spelt flour
1 Sachet (17g) Cream of Tartar baking powder (I use Verival Bio)
1 1/2 Glass of warm water
1 1/2 tablespoon of Olive oil
1 teaspoon of salt
Coarse sea salt & extra oil for topping
Place the flour, salt, cream of tartar, olive oil into a large bowl and mix. Gently pour in 1 glass of water and stir with your hand or a wooden spoon to form a dough then knead the dough in the bowl for five minutes, gradually adding the remaining water.
Place the dough onto an oiled work surface and continue kneading with the palm of your hands for a good 5 minutes, until dough is smooth. After place the ball of dough in the bowl (I suggest to add a drop of oil at the base of the bowl to keep the dough nice and moist). Cover the bowl and leave to rise for about 2 hours. It should double in size and be ever so soft.
Turn your oven on at 250 C. Take a round baking tray (33.5cm) and drizzle a little oil. Place the dough onto the baking tray and use your fingers to press and spread the dough evenly. Cover with a kitchen towel and leave for 20-30mins. After make small dough dimples with your fingers, sprinkle some coarse salt on top and drizzle a little oil. I also like to add some rosemary. Place into heated oven and bake for 10-15 minutes. Once ready let it cool and voila yummy healthy focaccia is ready to serve.
